Cooked Tomato Salsa

5 pounds tomatoes
2 green peppers
1 red pepper
1 yellow pepper
2 jalapeƱos (more if you want it hotter)
2 lg. onions
3 ribs celery
1/2 bunch cilantro
1 – 6 oz. tomato paste
1 – 24 oz ketchup
3 cup water
Salt and pepper to taste

1. Chop all the ingredients.

2. Bring to a boil and simmer all the ingredients with the lid on until tender. About 30-40 minutes.

3. Using an immersion blender or a regular blender blend the ingredients until it is a smoother consistency.

4. Jar and seal by boiling the filled jars for 10 minutes.

Variations: My son and I like our salsa spicier. We often add red pepper flakes, hot sauce or cayenne pepper.
